A guide to bold, authentic Thai cooking from Andy Ricker, the chef and owner of the wildly popular and widely lauded Pok Pok restaurants. After decades spent traveling throughout Thailand, Andy Ricker wanted to bring the country's famed street food stateside. In 2005 he opened Pok Pok, so named for the sound a pestle makes when it strikes a clay mortar, in an old shack in a residential neighborhood of Portland, Oregon. Ricker's traditional take on Thai food soon drew the notice of the New York Times and Gourmet magazine, establishing him as a culinary star. Now, with his first cookbook, Ricker tackles head-on the myths that keep people from making Thai food at home: that it's too spicy for the American palate or too difficult to source ingredients. Fifty knockout recipes for simple and delicious Thai dishes range from Grilled Pork Collar with Spicy Dipping Sauce and Iced Greens to Andy's now-famous Vietnamese Fish Sauce Wings. Including a primer in Thai techniques and flavor profiles, with tips for modifying local produce to mimic Thai flavors, Pok Pok makes authentic Thai food accessible to any home cook.

Few subjects elicit greater moral outrage than human trafficking. Media reports of dehumanizing practices such as slavery, abduction, child prostitution, and torture, along with shocking statistics, form the basis of public knowledge. Those who work closely with victims acknowledge the complexity of the issue, and it is this complexity, rather than loose statistics and conjecture, that deserves our attention. With sensitivity and candor, this book addresses the reality of human trafficking in Thailand, dissecting studies, presenting facts, and dismissing stereotypes. It focuses on the areas of fishing, agriculture, domestic work, sex work, and the trafficking of children, weaving individual narratives and official studies into the wider history of Thailand’s changing economy and labor situation. It also details how the Thai government has addressed the issue, reflects on the roots of human exploitation, and suggests a way forward. This book raises much-needed awareness of commonly held misconceptions and clarifies what we know and what we have yet to discover about the trafficking of persons to and from Thailand. Highlights • Concise and accessible study of the reality of human trafficking in Thailand • Thorough critical analysis of current policies and public discourse on trafficking • Details relevant Thai and international laws • Discusses the relationship between the modern economic system and exploitation • Analyzes the changing face of the Thai labor market and the impact of industrialization on the Thai population

Tourist adverts and glossy publications present Thailand as an exotic country with a rich cultural heritage, strong religious traditions and a much-loved monarchy. Historians too have contributed to Thailand’s international allure by asserting its unique historical and cultural continuity in comparison to the other countries of South-east Asia, whose modern histories are stained by colonialism and nationalist struggles for independence. Thailand: The Worldly Kingdomchallenges these commonplaces by offering a reinterpretation of the emergence and development of the Thai nation-state, showing it to be a long-term process shaped by interactions with the outside world in the pursuit of civilization and, more recently, globalization. Maurizio Peleggi’s original approach is reflected in the book’s thematic structure, with chapters that investigate, among other issues, the geographical, linguistic and ethnic diversity of the territories that came to form modern Thailand; changes in class and gender relations; the role of institutions and ideologies; and the reinvention of Thai identity from within through a repackaging of its heritage in magazines, novels, art and the mass media. Peleggi goes on to explore how the Thai people relate to the outside world: their prototypal enemies – the Burmese; southern Chinese immigrants; and, above all, farang– Westerners – who have been involved in the region since the seventeenth century and yet remain, for the Thais, the quintessential ‘other’. Thailand: The Worldly Kingdomis a concise yet exceptional introduction to the myriad complexities that lie behind Thailand’s blandly exotic facade.

Since 2004, Thailand’s southern border provinces have been plagued by violence. There are a wide array of explanations for this violence, from the revival of Malay nationalist movements and the influence from the global trend of radical Islam, to the power play among the regional underground crime syndicates, politicians, and state authorities. The disparate interpretations signal the dynamic and complex discursive contention of this damaging and enduring conflict, and this book looks at how this is played out in the Thai media, and with what possible consequences. In analysing the southern conflict coverage, the book presents the deficiencies in news coverage, as produced by four news organisations of different natures across a seven-year review period, and discusses the professional practices that hinder journalism from serving as a fair arena for healthy and rational democratic debates. Based on in-depth interviews with news workers, it argues that Thai journalism is not always monolithic and static, as shown in the discursive shifts in news content, the variations of journalistic practices and news workers’ disparate stances on the conflict. The book goes on to highlight the less immediately apparent difficulties of political conflict reporting, such as the subtle patterns of intimidation and media manipulation, as well as the challenges of countering socially-prevailing hegemonic beliefs in Thai society. Exploring the political contingencies and socio-cultural influences at play, this book provides an in-depth study of journalism’s role in politics in Thailand, and is of interest to students and scholars of Southeast Asian Politics, Media Studies and Peace and Conflict Studies.
