Food preservation provides a wide array of benefits for both you and your family. Buying in bulk is often cheaper, but when you have no way of properly storing the bulk items for the long haul, you end up wasting money when the food spoils and you have to throw it out. Preserving the bulk foods properly lets you enjoy both the food and the money saved. Furthermore, preserving your own food is just the excuse you need to finally start that vegetable garden you have been putting off. Despite all the benefits preserving your own food has, some people steer clear of the process because they assume that it's just too hard and time consuming. This just isn't the case! In fact, once you get the hang of it, you can quickly preserve food in as little as a 10 minutes! But where does one go when they want to learn the ins and outs of food preservation? Food is a significant part of our daily lives and can be one of the most telling records of a time and place. Our meals -- from what we eat, to how we prepare it, to how we consume it -- illuminate our culture and history. As a result, cookbooks present a unique opportunity to analyze changing foodways and can yield surprising discoveries about society's tastes and priorities. In Kentucky's Cookbook Heritage, John van Willigen explores the state's history through its changing food culture, beginning with Lettice Bryan's The Kentucky Housewife (originally published in 1839). Considered one of the earliest regional cookbooks, The Kentucky Housewife includes pre--Civil War recipes intended for use by a household staff instead of an individual cook, along with instructions for serving the family. Van Willigen also shares the story of the original Aunt Jemima -- the advertising persona of Nancy Green, born in Montgomery County, Kentucky -- who was one of many African American voices in Kentucky culinary history. Kentucky's Cookbook Heritage is a journey through the history of the commonwealth, showcasing the shifting priorities and innovations of the times. Analyzing the historical importance of a wide range of publications, from the nonprofit and charity cookbooks that flourished at the end of the twentieth century to the contemporary cookbook that emphasizes local ingredients, van Willigen provides a valuable perspective on the state's social history.

Canning can be simply defined as a method of food preservation. Food preservation was often practiced, in earlier times, for survival. In times of war and migration, people would preserve their food in jars and makeshift cans, so that they would have an ample supply of sustenance in the event of an emergency. In the British Empire times, canned food was mainly for those who belonged to the Royal Navy or to the army. They needed preserved food during times of war due to the nature of their circumstances and their environment. In times of war, families would store canned food in bomb bunkers and in their safe houses so that in the event of a bombing raid, or worse, they would be able to survive within their safe spaces. Radical religious groups would store canned food as well, in their bunkers, so that they would have a substantial food supply when the Apocalypse or Armageddon occurred. Sailors would also preserve their food in cans so that they would have a reliable food supply during their time away at sea, which would often be for weeks, months, or even years. People would preserve their foods with long periods of time in mind; they would plan their food with years in mind, not just days or weeks. As time went by and civilization experienced advancement, food preservation became an industrial thing. Factories and other industrial places would use heavy-duty machines to can food in a tin or steel-coated containers. The same machines would be used to seal the containers airtight. This was done to ensure that no form of bacteria would be able to access the food. Nowadays, canning can be done in the comfort of your home. Canning has made its way into popular culture and people are taking advantage of this method of food preservation. Materials are easy to access and a number of tutorials and guides have been produced to help people can their food effectively from their kitchens. People don't need to have highly complicated machines or dangerous materials in order to can foods of their choice from home or their personal workshops. Manufacturers have noticed that canning is popular among families, so child-safe containers and sealing kits have been produced to ensure that no unfortunate accidents occur. Canning involves the preservation of cooked or uncooked food by placing and sealing it in an airtight container. The container is often in the form of tin-plated and/or steel coated in lacquer. The purpose of this form of preservation is to ensure that the contained food will remain in a 'fresh' and consumable state for a longer period of time than it would in an unpreserved state. The food has to be opened with a can opener or any other mechanism designed to open the sealed can. If you want to know more about canning recipes, then this is the book for you!
